Banana Pancakes - 2 ingredients.

Okay,  we'll start with 2 ingredients.  You may want to add 1 more.  This is moderate to high amines,  depending how ripe your bananas are so this would make a great Gluten-Free Amine challenge. 

I am back to dabbling in gluten-free.  As I am dabbling,  I won't make big noises about it on here because I don't know enough about it,  all the hiding places of gluten,  to be a GF-frillypants-guru. 

So,  this is one of those recipes you wonder how it is you got to *the age you are* and didn't know this.  A bit like "Banana Ice-Cream - 1 ingredient".  I was googling around, trying to find a really quick GF flat bread while the kids were whining at me that they were hungry.  I am at this awful early stage of GF when I've removed the bread,  but I haven't yet replaced it.  I need to think this through much better!

So,  here's the site where I got the recipe:  Top With Cinnamon

Ingredients:
  • 1 large banana**
  • 2 eggs
Optional:
  • 1/4 tsp GF Baking Powder
** Mod Amines

Method:
  • Mash the banana and add the eggs,  combine really well.
  • Cook in medium heat fry pan the same as you would a regular pancake,  but don't expect the bubbles to form and pop.  If you get that far,  you've burned it.
  • Flipping is done very carefully once you can get a wide spatula/egg slide under there.
Verdict:  YUMMOH!!!!  One of mine turned out like a 'banana omelet',  but then I realised it was a bit too thick to properly cook through.  Also,  the banana was a bit lumpy.  The rest were YUMMOH!!    I made the first lot without the Baking Powder and found them fairly thin.  Adding the Baking powder made them fluff up just that little bit and made it more pancake-esque.  Try it one way and then the other,  see how you like it.

Tweeks:  For Failsafe, there's not a lot you can do with this, except eat them with pure maple syrup.  Or even just alone!  If you're doing an amine challenge,  you might like to do what the original recipe says and add some safe chocolate bits before you flip it over.   To make more,  I did 4 bananas and 5 or 6 eggs.  Worked well.
