Shortcrust Pastry

Lifted directly from the Thermomix 'Everyday Cooking' book:

Ingredients:
  • 200g Plain flour
  • 100g butter, chilled and cut into pieces
  • 1/4 tsp Salt
  • 50-60g Water, chilled
Method:
  • Place flour, butter and salt in TMX and mix for about 10 seconds on speed 6 until mix resembles breadcrumbs
  • Set dial to closed lid position
  • Add water and knead for 10-20 seconds on interval speed to form dough
  • Add a little more water, if necessary, to bind
  • Turn mixture onto floured board and knead lightly
  • Put into fridge for about 15 minutes before rollling out and using
  • Bake at 200degC unless recipe states otherwise
  • This recipe can be used for savoury flans, pies, quiches etc.

  1. For Gluten Free Pastry:

    200g GF flour (I've used Woolworths Gluten Free Macro Plain flour (also soy free))
    70g butter (you could probably also use DF margarine, but may have less success - I haven't tried it)
    1/4 tsp salt
    100 ml water

    * Follow directions above for steps 1 to 3. Do not add extra water.
    * Turn out the dough onto a sheet of baking paper. Cover with another sheet of baking paper and roll out between the sheets of baking paper.

    * To make a pie base & blind bake it, put the whole thing, paper and all, into the pie dish and shape as best you can. Put whatever you're using to blind bake on top of the top sheet of baking paper, after poking some holes to let out any air bubbles.

    * If not blind baking, remove the top sheet of paper, and put pastry plus bottom sheet of paper in pie base.

    * To make sausage rolls, remove the top sheet of paper, put the mince mixture onto the pastry, then use the bottom sheet of paper to help roll the pastry over the top of the mince.

    * The pastry will not brown, unless brushed with beaten egg or similar.

    * I cook sausage rolls (the mince has been pre-cooked and I cut them into about 1.5 inch long pieces) for 20 minutes at 200 degrees C.
